The public image of hospitality work is either romanticized or dismissed. Celebrity chef culture on one end. "Just a server" on the other. Neither is accurate.

The real work lives somewhere in between: in the pre-shift sidework, in the ticket times nobody cheers for, in the closing duties done right even when everyone's running on empty. In the line cook who knows the recipe isn't right but makes it work anyway because the window is calling. In the host who absorbs the frustration of a wait list and stays even-keeled because that is what the job needs right now.

"There's a version of this industry that gets celebrated. The awards, the reviews, the open kitchens with pretty tile. And then there's the version the people inside it actually live," DiPietrantonio said. "I built this brand for the second version. The version where you're still breaking down your station at 1 a.m. and you've got a double tomorrow."

Worker recognition in the service industry is not a new conversation, but it rarely makes it past the surface.
