From late winter into early summer, Houston's favorite social event isn't a gala. It's a crawfish boil. Peak season usually lands in spring, when the crawfish are big and the patios are full.
How to peel like a local
- Hold the head in one hand and the tail in the other.
- Twist and pull to separate.
- Pinch the tail and slide the meat out (some peel off the first ring of shell first).
- Brave souls suck the head for the spicy juices.
What to order
Crawfish by the pound, plus corn, potatoes and sausage from the boil. Viet-Cajun spots add garlic butter and the spice level of your choosing.
What to wear
Nothing precious. A cute tee you don't mind getting spicy, hair up, nails short-ish. Bring wet wipes. Lots of them.
